β€œLumpia” Egg Roll

Lumpia is a dish in the Philippines that served in every β€œπ‘†π‘Žπ‘™π‘œ-π‘†π‘Žπ‘™π‘œβ€œ, Get Together, or any Celebration. There are many versions of how to make Lumpia and lots of variation for fillings. Here in the States, I served this as an appetizer or finger food. The main ingredients for this recipe is the β€œLumpia Wrapper” that can be purchased in any Asian Market here in the States.

This is the recipe for my β€œπΉπ‘Žπ‘šπ‘œπ‘’π‘  πΏπ‘’π‘šπ‘π‘–π‘Ž (𝐸𝑔𝑔 π‘…π‘œπ‘™π‘™). β€œFamous” because this is on top of the list for most requested food. The shrimp is optional. I am cautious to put shrimp especially if I served it with guest because of allergies.

  • 1 lbs of ground meat of your choice (𝐼 π‘π‘Ÿπ‘’π‘“π‘’π‘Ÿ π‘‘π‘œ 𝑒𝑠𝑒𝑑 π‘”π‘Ÿπ‘œπ‘’π‘›π‘‘ π‘‘π‘’π‘Ÿπ‘˜π‘’π‘¦)
  • 1/4 lbs of diced shrimp ( π‘œπ‘π‘‘π‘–π‘œπ‘›π‘Žπ‘™)
  • 1 cup of each diced potatoes & carrots
  • 2 cloves diced garlic
  • 1 medium diced onion
  • 2tbsp cooking oil and more for frying
  • 1/4 cup of water
  • 1/4 cup of shredded cheese ( π‘Žπ‘›π‘¦ π‘˜π‘–π‘›π‘‘ π‘œπ‘“ π‘β„Žπ‘’π‘’π‘ π‘’)
  • 2 tbsp soy sauce
  • salt & pepper to taste
  • Lumpia Wrapper

In a pan, sautΓ© onion and garlic with 2 tbsp cooking oil. Add ground meat and seasoned it with salt and pepper. Β Cook until brown. Add carrots and potatoes, mix throughly. Then add water, cheese and seasoned it with soy sauce, and more salt & pepper to taste. Simmer for 10 minutes and let it cool for wrapping.

This past weeks has been so difficult for everyone in America. The death of George Floyd on the hand of a police officer in Minneapolis, Minnesota has spark outraged not only in the black community but the whole country and in other part of the world.

Racism is an issue that we have to dealt with as a person of color. It’s an issue today and was an issue throughout the history not only in America but the entire world. That doesn’t mean that we have to tolerate it. This is what happened at this moment in time. People are on the streets protesting, screaming for change that has been overdue, tired and needs action especially in the African American Community. Senseless killing of black men, oppression that was dated back over 300 years ago. But I do believe that there are a lot of ways to do this though, not in any type of violence, looting, setting building on fire, destroying businesses etc…just to get a message across. Romans 12: 17-18 saysΒ β€œNever pay back evil with more evil. Do things in such a way that everyone can see you are honorable. Do all that you can to live in peace with everyone. And it continues to verse 21Β Don’t let evil conquer you, but conquer evil by doing good.”

This issues is so close to home. As a wife of a Black American and a mother of two Black daughters every time Β I heard and see violence against the black community, fears take over. This could easily happen to my husband or my children. But I just have to TRUST GOD for this one. I have to covered mine in prayers especially my firstborn, who joined the protest in Tuscaloosa. I asked her β€œwhy” and she simply says, β€œI want to make a difference.” So, π‘Šβ„Žπ‘’π‘Ÿπ‘’ π‘‘π‘œ 𝑀𝑒 π‘”π‘œ π‘“π‘Ÿπ‘œπ‘š β„Žπ‘’π‘Ÿπ‘’? π‘‚π‘πΏπ‘Œ 𝐺𝑂𝐷 πΎπ‘π‘‚π‘Šπ‘†! But Please remember to Never Take Revenge. Β β€œDear friends, never take revenge. Leave that to the righteous anger of God. For the Scriptures say, β€œI will take revenge; I will pay them back,” says the Lord.” Romans‬ ‭12:19‬ ‭

β€œSinugba nga Baboyβ€œ (Grilled Pork)

This recipe is one of my familyβ€˜s Β favorite. When I mentioned to them that I will write a blog about it, my firstborn basically said NO. She doesn’t want me to share this recipe. Inspite of her saying no. Here it is, I hope you’ll try it and enjoy as much as my family does every time I make them.

π‘†π‘–π‘›π‘’π‘”π‘π‘Ž is my π‘›π‘Žπ‘‘π‘–π‘£π‘’ π‘‘π‘œπ‘›π‘”π‘’π‘’ that means GRILLED. The secret of this recipe is to let the marinade soaked in the pork overnight and grilled it the next day. I prefer to used a pork shoulder because of the fat that I like in a meat.

1 Pork Shoulder (cut the way you want it),
3/4 cup Vinegar, 3/4 cup soy sauce, 1 onion (chopped), 4Β cloves of garlic (chopped), 1 juice of a lemon, 4 Bay leaves.

Β For pepper corn or black pepper, salt & sugar to taste but π‘‘π‘œπ‘›β€™π‘‘ 𝑏𝑒 π‘ β„Žπ‘¦ π‘‘π‘œ π‘ π‘’π‘Žπ‘ π‘œπ‘›π‘’π‘‘ π‘¦π‘œπ‘’π‘Ÿ π‘šπ‘’π‘Žπ‘‘, 𝐼 π‘™π‘–π‘˜π‘’π‘‘ π‘šπ‘¦ π‘šπ‘’π‘Žπ‘‘ π‘ π‘’π‘Žπ‘ π‘œπ‘›π‘’π‘‘ 𝑀𝑒𝑙𝑙.

Mix all the ingredients. Marinate the meat overnight. Reserve the marinade for basting. Β Grilled it for 45-60 minutes, baste it every 15 minutes with the reserved marinade and turn the meat over every time. Keep doing it until it’s done. Let the meat set for about 15 minutes before cutting to a bite-size and SERVE.

Patio Decorating Ideas

If you know me well enough, you know I have a love affair with π·π‘’π‘π‘œπ‘Ÿπ‘Žπ‘‘π‘–π‘›π‘”. I am always on the hunt for unique things wether in the thrift store, furniture store or in the backyard. My latest project is decorating our patio just in time for the summer.

We have a back patio that we just had a roof and floor put in and it costs us an arm and a leg. Because of that I refused to buy anything except the patio furniture. π‘†π‘œ, π‘‘β„Žπ‘’ π‘‘π‘’π‘π‘œπ‘Ÿπ‘Žπ‘‘π‘œπ‘Ÿ π‘šπ‘–π‘›π‘‘ π‘‘β„Žπ‘Žπ‘‘β€™π‘  𝑖𝑛 π‘šπ‘’ β€œπ‘˜π‘–π‘π‘˜π‘’π‘‘ 𝑖𝑛”. I look around the backyard and notice that tree limbs are all over so I decided to put it to good used.

I found an old pot, repaint/spray paint, fill it up with rocks, arrange the limbs on how I Β want it to look and top it with mulch. For the centerpiece, I did the same thing except the mulch. I just love how it looks, the clean design and the artwork that goes with it. – π‘₯π‘œπ‘₯π‘œπŸ–€π‘—π‘š

I was blessed by the word last Sunday. It stays in my head all week. A word worth sharing!

Psalms 139: 13-16 saysΒ β€œYou made all the delicate, inner parts of my body and knit me together in my mother’s womb. Thank you for making me so wonderfully complex! Your workmanship is marvelousβ€”how well I know it. You watched me as I was being formed in utter seclusion, as I was woven together in the dark of the womb. You saw me before I was born. Every day of my life was recorded in your book. Every moment was laid out before a single day had passed.”

Β God take his time to knit me together in my mother’s womb. I felt so special.
